Kuhajte na laganoj vatri nekoliko minuta dok se ne zgusne u rijetku juhu\/umak. Dodajte nasjeckanu slaninu i pr\u017eite dok ne pusti mast i postane hrskava. Poja\u010dajte vatru, dodajte kocke mesa i zapecite ih sa svih strana dok ne dobiju boju. Dodajte protisnuti \u010de\u0161njak, nasjeckanu mrkvu i za\u010dine (sol, papar, lovorov list). Kada meso dobije boju, podlijte crnim vinom i pustite da alkohol ispari, a teku\u0107ina se reducira. Dodajte mljevenu papriku i sok od raj\u010dice, promije\u0161ajte, podlijte vodom ili temeljcem da prekrije meso. Smanjite vatru, poklopite i kuhajte (dinstajte) na laganoj vatri dok meso ne omek\u0161a (mo\u017ee potrajati 2 do 4 sata, ovisno o vrsti mesa). Po potrebi dolijevajte malo teku\u0107ine. Ocijedite ga, pustite da se malo ohladi, ogulite i nare\u017eite na plo\u0161ke ili kockice. Crveni luk nare\u017eite na tanke polumjesece. Ako \u017eelite ubla\u017eiti njegovu ja\u010dinu, mo\u017eete ga kratko potopiti u ocat ili posoliti, te ostaviti da odstoji 10-ak minuta prije nego ga dodate krumpiru. U posudi pomije\u0161ajte krumpir i luk. Dodajte sol, papar, ulje i ocat po \u017eelji. Lagano promije\u0161ajte. Po \u017eelji dodajte \u017eli\u010dicu senfa ili svje\u017eeg per\u0161ina.<\/p>\n<p style=\"text-align: center;\">Odreske \u0161arana operite, posu\u0161ite papirnatim ru\u010dnikom i dobro posolite i po \u017eelji popaprite.&nbsp;&nbsp;&nbsp;&nbsp; Pripremite tri odvojene posude i u njima, bra\u0161no, umu\u0107ena jaja, kru\u0161ne mrvice. Svaki komad \u0161arana uvaljajte, bra\u0161no, jaja i na kraju u kru\u0161ne mrvice. Pa\u017eljivo stavljajte paniranu ribu u vru\u0107e ulje. Pr\u017eite sa svake strane 4-6 minuta (ovisno o debljini komada), dok ne postane zlatnosme\u0111a i hrskava. Ne pretrpavajte tavu.
